Spanish Rice

Ingredients

  1. Rice - 1.5 Cups
  2. Chicken Stock - 2.5 Cups
  3. Butter - 2 Tbsp
  4. Olive oil - 4 Tsp
  5. Tomato Paste - 6 ounce
  6. Onion - 1
  7. Garlic - 4 Cloves
  8. Jalepeno - 1
  9. Bell Pepper (Chopped) - 1
  10. Mixed Herbs (Basil, Oregano, Thyme) - 1 Tsp
  11. Parsley - 1 Tsp
  12. Paprika - 1 Tsp
  13. Turmeric - 1/4 Tsp
  14. Cumin - 1/8 Tsp
  15. Black pepper - 1 Tsp

Directions

  1. Heat Olive oil on a Cast Iron Pan
  2. Add Onions and Chopped Bell pepper
  3. Add butter and continue sautee
  4. Set oven to 400F
  5. Add Mixed herbs, salt, black pepper, parsley, paprika, turmeric and cumin
  6. Add Tomato paste and cook for 5 minutes or until its well mixed
  7. Add Rice and cook for an additional 5 minutes
  8. Add the chicken broth and mix well
  9. Cover the pan with a lid and put in oven for 30-40 minutes
