Ethiopian braised lamb stew based on different recipes I found on youtube with my own slight twist.

Ingredients

  1. Lamb - 1Kg (Rack of 18)
  2. Olive Oil - 2 Tbsp
  3. Onion - 1
  4. Garlic - 6 Cloves
  5. Ginger - 2 Tsp
  6. Ethiopian butter spice - 1.5 Tsp
  7. Turmeric - 1/2 Tsp
  8. Jalepeno - 2
  9. Rosemary - 2
  10. Chives or Green Onion - 1/2 Cup
  11. Salt - 3/4 Tbsp
  12. Ethiopian Butter - 1 Tbsp

Directions

  1. Wash and dry the lamb racks and cut each piece with two bones
  2. Set Pressure cooker to saute and put Olive oil
  3. Dice the Onion and Chives and sautee it
  4. Add Garlic, Ginger, Butter spice and Turmeric and continue sautee
  5. Stop sauteeing and add water till the meat drowns in it
  6. Add Rosemary, Jalepeno and Salt and start the pressure cooker for 1.5 hours
  7. Turnoff pressure cooker. Let it steam out.
  8. Add the Ethiopian butter and mix well as the final touch
