Lamb Mendi

Recipe for a lamb mendi taken from a youtube channel. This came out good on first attempt but a bit dry since I forgot to put in pail of water in oven when cooking. This recipe is a big meal that can feed upto 20 adults.

Ingredients

  1. Leg of Lamb - 9lb
  2. Lemon - 2 Tbsp
  3. Vinegar - 2 Tbsp
  4. Olive Oil - 1/4 Cup
  5. Salt - 1 Tsp
  6. Paprika - 1 Tbsp
  7. Cumin - 1/2 Tsp
  8. Black Pepper - 1/2 Tsp
  9. Turmeric - 1/2 Tsp
  10. Onion - 120 gm
  11. Garlic - 120 gm
  12. Cinnamon Stick - 2
  13. Bay Leaves - 3
  14. Cardamom seeds - 6
  15. Clove seeds - 6
  16. Coriander seeds - 1Tsp
  17. Thyme - 1/2 Tsp
  18. Rice - 3 Cups
  19. Chicken Bouillon - 1 Tsp
  20. Red Saffron - 3 Tsp

Directions

Making the meat:

  1. In a bowl, mix the Lemon, Vinegar, Olive Oil, Salt, Paprika, Cumin, Black Pepper, Turmeric
  2. Cut the meat diagonally and marinate it with the mix and let stay overnight
  3. Cut out a big parchment paper and place in the sliced onions, garlic cloves, cinnamon stick, bay leaves, cardamom, cloves and coriander seeds.
  4. Place the meat on top and wrap the it all with the parchment paper and then wrap it in an aluminium foil.
  5. Put it in oven at 400F with a pail of water below and let it cook for 3-4 hours until meat is soft.

Making the rice:

  1. Heat a large dutch oven and put olive oil when it gets hot
  2. Add Cinnamon Sticks, Cardamom, Cloves, Bay Leaves, Garlic and Salt
  3. Add the washed rice and chicken bouillon
  4. Sautee for bit and add 6 cups of water.
  5. Cook it over high heat until water decreases then put three or four streak lines of saffron oil
  6. Then Cook it over low heat
