Lamb Ribs Fusion

A recipe I made up from watching different ways of cooking rib of lamb in oven. This recipe can be used for beef ribs too.

Ingredients

  1. Lamb Ribs - 5lb
  2. Soy Sauce - 3 Tbsp
  3. Lemon - 2 Tbsp
  4. Vinegar - 2 Tbsp
  5. Olive oil - 1/4 Cup
  6. Black Pepper - 1/2 Tsp
  7. Cumin - 1/2 Tsp
  8. Thyme - 1/2 Tsp
  9. Onion - 1
  10. Garlic - 6 Cloves
  11. Rosemary Leaf - 1

Directions

  1. Mix the Soy sauce, lemon, vinegar, olive oil, black pepper, cumin, thyme, garlic powder and onion powder
  2. marinate the ribs and let stay overnight preferrably
  3. Slice onions and put in baking tray. Add the garlic cloves on top and also the Rosemary.
  4. Place the meat on top and cover tightly with aluminium foil
  5. Put in oven at 400F for 3 Hours
  6. When ready, take off the foil cover and broil at high for 10-15 minutes till it gets the color
Pasta Tomato Sauce

This is a recipe for pasta with plain tomato sauce.

Ingredients

  1. Plain tomatoe sauce - 425 gm
  2. Diced Tomatoes - 411 gm
  3. Tomoato Paste - 170 gm
  4. Yellow Onions - 2
  5. Garlic - 6 Cloves
  6. Olive Oil - 1/3 Cup
  7. Soffrito seasoning (dried onions, tomato flakes, seasalt, dried garlic, chili pepper, parsley, red pepper, rosemary, sage)
  8. Onion Powder
  9. Garlic Powder
  10. Black pepper
  11. Salt

Directions

  1. Put cast iron pot on low-med heat
  2. Add olive oil when it gets hot
  3. Add the Onions and saute till they are soft
  4. Start oven at 375
  5. Add garlic cloves and sautee for a bit
  6. Add Soffrito seasoning, onion and garlic powder, black pepper and salt and saute for a bit
  7. Add tomato paste and saute till its loose and creamy
  8. Add diced tomatoes and sautee for a bit
  9. Add tomato sauce and sautee until it starts sputtering
  10. Cover and put in oven
  11. Let cook in oven for another 30-40 minutes till you get desired result.
  12. Every 10-15 minutes, take out from oven, stir sauce and put it back.
Sardine Salad

A simple hearty and healthy meal that can be eaten for a light lunch or dinner.

Ingredients

  1. Romaine Lettuce - 1 Head
  2. Olive Oil - 5 Tbsp
  3. Tomato - 1 Large
  4. Red Onion - 1 Medium
  5. Jalepeno - 1
  6. White Vinegar - 3 Tbsp
  7. Lemon Juice - 1 Tbsp
  8. Salt - 3 Tsp
  9. Sardine - 1 Can

Directions

  1. Wash salad and rinse using a salad rinser
  2. Cut the tomatoes, onion, jalepeno and mix with salad in bowl
  3. Mix Olive oil, vinegar, lemon, and salt and add to bowl
  4. Add the sardines and mix bowl

Recipe for a lamb mendi taken from a youtube channel. This came out good on first attempt but a bit dry since I forgot to put in pail of water in oven when cooking. This recipe is a big meal that can feed upto 20 adults.

Ingredients

  1. Leg of Lamb - 9lb
  2. Lemon - 2 Tbsp
  3. Vinegar - 2 Tbsp
  4. Olive Oil - 1/4 Cup
  5. Salt - 1 Tsp
  6. Paprika - 1 Tbsp
  7. Cumin - 1/2 Tsp
  8. Black Pepper - 1/2 Tsp
  9. Turmeric - 1/2 Tsp
  10. Onion - 120 gm
  11. Garlic - 120 gm
  12. Cinnamon Stick - 2
  13. Bay Leaves - 3
  14. Cardamom seeds - 6
  15. Clove seeds - 6
  16. Coriander seeds - 1Tsp
  17. Thyme - 1/2 Tsp
  18. Rice - 3 Cups
  19. Chicken Bouillon - 1 Tsp
  20. Red Saffron - 3 Tsp

Egg Sausage Avocado

Ingredients

  1. Eggs - 2 (Medium)
  2. Sausage Links (Pork) - 2
  3. Parmesan Cheese - 1 Tbsp
  4. Chia seeds - 2 Tsp
  5. Olive oil - 2 Tsp
  6. Avocado - 1
  7. Garlic Powder - 1/4 Tsp
  8. Onion Powder - 1/4 Tsp
  9. Black Pepper - 1/4 Tsp
  10. Salt - 1/8 Tsp

Directions

  1. Put pan on oven and let it heat up
  2. Put the sausage links in Air Fryer
  3. Set Air Fryer temprature to 390 and time 9 minutes
  4. Batter Eggs with the Cheese, Black Pepper, Chia Seeds, Salt, Onion and Garlic Powder
  5. Add batter mix to hot pan and cook till its done
  6. Serve the eggs, avocado and sausage together on a plate
Spanish Rice

Ingredients

  1. Rice - 1.5 Cups
  2. Chicken Stock - 2.5 Cups
  3. Butter - 2 Tbsp
  4. Olive oil - 4 Tsp
  5. Tomato Paste - 6 ounce
  6. Onion - 1
  7. Garlic - 4 Cloves
  8. Jalepeno - 1
  9. Bell Pepper (Chopped) - 1
  10. Mixed Herbs (Basil, Oregano, Thyme) - 1 Tsp
  11. Parsley - 1 Tsp
  12. Paprika - 1 Tsp
  13. Turmeric - 1/4 Tsp
  14. Cumin - 1/8 Tsp
  15. Black pepper - 1 Tsp

Directions

  1. Heat Olive oil on a Cast Iron Pan
  2. Add Onions and Chopped Bell pepper
  3. Add butter and continue sautee
  4. Set oven to 400F
  5. Add Mixed herbs, salt, black pepper, parsley, paprika, turmeric and cumin
  6. Add Tomato paste and cook for 5 minutes or until its well mixed
  7. Add Rice and cook for an additional 5 minutes
  8. Add the chicken broth and mix well
  9. Cover the pan with a lid and put in oven for 30-40 minutes
Pasta Bolognese Sauce

This is a recipe for pasta with traditional beef sauce. This sauce goes well with Pappardelle pasta or as a sauce for lasagna.

Ingredients

  9. Onion Powder
  10. Garlic Powder
  11. Black pepper
  12. Salt
  13. Ground Beef - 1 pound

Directions

  1. Put cast iron pot on low-med heat
  2. Add olive oil when it gets hot
  3. Add the Onions and saute till they are soft
  4. Add Berbere and saute for a bit
  5. Add beef and mix it well so there are no clumps
  6. Start oven at 375
  7. Add garlic cloves and sautee for a bit
  8. Add Soffrito seasoning, onion and garlic powder, black pepper and salt and saute for a bit
  9. Add tomato paste and saute till its loose and creamy
  10. Add diced tomatoes and sautee for a bit
  11. Add tomato sauce and sautee until it starts sputtering
  12. Cover and put in oven
  13. Let cook in oven for another 30-40 minutes till you get desired result.
  14. Every 10-15 minutes, take out from oven, stir sauce and put it back.
Pasta Carbonara

This is a recipe I got from the book ‘Italian Country Cooking - The secrets of Cucina Povera’ by Loukie Werle. I’ve had this recipe since 2008 and it’s really delicious as well as easy and quick to make. Note, I’ve substituted Red Chillies with Red Bell Pepper.

Ingredients

  1. Large Fresh Eggs - 2
  2. Grated Parmesan Cheese - 2/3 Cup
  3. Red Bell Pepper - 1
  4. Olive Oil - 1/3 Cup
  5. Garlic - 2 Large Cloves
  6. Pancetta - 1/4 Lb
  7. Spaghetti - 1 Lb

Directions

  1. Start Boiling water for Pasta
  2. Combine the eggs and parmesan in a bow and whisk until smooth
  3. Cook the Pancetta on a frying pan in low heat until it starts to loose its fat
  4. Add oil, garlic, red bell pepper into the pan and cook over low heat
  5. Add Pasta when Pancetta mix is about to get done
  6. Drain the pasta and put it back in the warm pot and add the mixes on #2 and #4
  7. Toss the pasta with the mix and keep warm in oven or microwave for 20 minutes
  8. Add copious amounts of grinded fresh black pepper upon serving
